Classy Carrot Moroccan Inspired Cauliflower & Chickpea Stew
Goodly Classy Carrot Soup becomes the base of a delicious stew that is ready in 30 minutes from start to finish.
Serve with rice, another grain, or roasted potatoes.
Heat the oil over in a medium-sized pot over medium heat. add the paprika, cumin, ginger, cinnamon and cayenne. When the spices sizzle, stir a few times and add the Classy Carrot Soup, water and salt.
Bring to a simmer and add the carrots. Cover and cook over low heat for 5 minutes until the carrots are barely tender. Stir in the cauliflower and chickpeas, cover and cook for 7-10 minutes until the cauliflower is tender.
Add a touch of water if the stew is too thick for your liking and adjust the seasoning. Serve immediately garnished with the cilantro either chopped or in sprigs as you prefer, and lemon wedges on the side.
