Wild Pacific Halibut with Goodly Tomato Coconut Soup
An easy and delicious way to enjoy fresh halibut while it’s in season.
Place the soup in a small pot. Stir in the water and bring to a boil. Cover, turn to a simmer and cook for 3 minutes. Stir in the spinach and halibut, cover and simmer for 3-4 minutes until the halibut is firm. Stir in the tomato and heat through. Season to taste with the salt and cayenne. Garnish and serve immediately with rice if desired.
Makes two servings.
